Release Notes:
Paolina is a 100% Barbera wine that Giulio dedicated to his grandmother, Paolina. This south-eatern facing vineyard was planted in 1988 and produces dark, smooth, fruity wines. After a ten-day fermentation, the wine is aged for 9 months in Slovenian oak barrels. Gentler than Ca' del Baio's other Barbera, the dark, brooding Giardin aged in smaller new oak barrels, Paolina is a great food wine with enough acidity to complement the red sauce inn Italian pasta and pizza dishes.
Tasting Notes:
A garnet colored wine with a soft, ripe nose of blackberries, cherries, plums and spice. On the palate, this wine is remarkably smooth with dark fruit and spice sensations, supple tannins, and a harmonious finish on fruit. This wine is made for drinking young - enjoy now to 2009 with grilled meat, pepperoni pizza, pasta with tomato or cream sauce, veal, roasted vegetables, or ribs.
