Cold maceration prior to fermentation, ageing on its lees, and minimal clarification.

Tasting Notes:

Deep purple color. Blackberries on the nose with hints of blueberries, black currants, minerals and flowers. Opulent taste, full-bodied and complex with well-integrated wood flavors. Can age for 10 to 12 years. Ideal with prime cuts of lamb or veal, or with roasts.
