A great value white wine from the heart of Gascony.

Release Notes:
On the day of the harvest, the grapes, while still in the vineyard, are piled in an enclosed container which is kept at a very low temperature (-3oc); at this temperature, there is no oxidation. Once in the winery (Mr. Grassa has a state-of-the-art winery, all in shining stainless steel), the grapes are partly destemmed and put in a cold vat for about 2 weeks. The temperature is then raised slowly until fermentation begins. When the fermentation is completed, the wine is transferred to closed stainless steel tanks, and again, the temperature is lowered to 5o or 6oc. The wine stays on its lees at this low temperature, and when separated from its lees, the two varietals (Chardonnay and Sauvignon) are blended on a 50-50 basis. At no time is the liquid in the process of becoming exposed to oxidation, the biggest danger in making white wines. This complex process, and the great result, justifies the accolade of Robert Parker: “Proprietor Yves Grassa is one of the most talented winemakers in the southwest of France.” Since this is a re-offering of this wine, we abide by our rule and apply a small discount, thus making it even more attractive.
Tasting Notes:
Pale yellow with pinkish hues. Pungent nose of gooseberries, green apples and citrus. Medium bodied with good grip and an instant cocktail of flavors ranging from grapefruit and lechee to apples and pears. Good level of acidity makes it quite refreshing. A conversation piece if served for cocktails but also enjoyable with shellfish or fish with creamy sauces or spicy oriental cuisine. Drinking well now. Serve chilled at 42F.
