Release Notes:
The Grapes that go into Il Molino di Grace’s Chianti Classico are carefully scrutinized to eliminate imperfections. The blend is mostly Sangiovese (90%) with tiny amounts of Cabernet Sauvignon, Canaiolo Nero and Merlot. The resulting wine is raised in stainless steel vessels, and micro-oxygenated to retain its freshness. Maturation takes place in a mixture of Bordeaux oak barrels, and the larger traditional Italian Botte for 12 months.
This gives the wine complexity, but does not overwhelm it with oak flavors.
Tasting Notes:
This is a beautiful wine: an intense ruby red color – dark for Sangiovese, with a complex bouquet of vanilla, berries, and cocoa; medium-bodied with good texture, smooth tannins, and a long finish on fruit. Chianti goes well with: steak sandwiches, quiche lorraine,
soppresata salami, pasta with meat sauce, game and aged hard cheeses.
Drinks well now through 2009.
