Release Notes:
Thierry first explored the Casablanca Valley looking to produce fine white wines, and this Chardonnay is one of the finest in his line. Hand-picked in the second half of March, 2001, the grapes for this wine were then stored in temperature-controlled stainless steel until fermentation was initiated, at which point the fermenting wine was transferred to oak barrels where they stayed for 9 days and half of which received malolactic fermentation as well. After fermentation was completed, the wine spent an additional 10 months in oak before being cold treated and bottled. The resulting wine is an exquisite New World Chardonnay with great oak notes and the capacity to age for years to come.
Tasting Notes:
Honey gold in color, this wine offers a pleasant, buttery bouquet of stone fruit aromas (especially peaches). In the mouth, this is a big, mouth-filling white wine with a balance of lychee, pineapple, green apple, and gentle, toasted oak flavors. The tropical fruit, peach and vanilla flavors lead to a nice, long finish. Drink now through 2008 with pork chops, chicken, turkey, seafood pasta, or swordfish.
